Plantain is a very versatile food it can be manipulated in so many ways to achieve one goal which can’t be farfetched from the idea of putting food on the table.
In this week’s edition of MCZ Cuisine, Lonhoe Way is showing us how to make an easy plantain dessert. From a mixture of freshly mashed ripe plantain and already prepared cornmeal, coconut flakes(desiccated), coconut cream, roughly chopped dates, raising agent, and a mixture of spices the plantain dessert recipe came to life.
The recipe calls for the use of uma/banana leaf this is used to wrap the dessert (which was beautifully portioned and wrapped) and then baked in an oven. This gives extra oomph to the plantain mixture wrapped in it. Lonhoe paired the plantain dessert with freshly made spicy tea brewed out of a blend of Ginger, Cinnamon sticks, Cloves, etc.
