Head Chef at Red Dish Chronicles, Abiola Akanji, professionally known as Chef Stone is back with the annual season of his thirty days of indepth, intense but easy cooking dinner ideas during the season of Ramadan.
However, this edition is in partnership with Mamador Nigeria, Chef Stone disclosed on the first day of Ramadan fast that iftar recipe, shopping list and procedure drops at 12:00noon everyday. For the first fifteen days chef Stone, took food lovers on a journey to fifteen African countries and showcased different fifteen cuisines from the African continent. In the last fifteen days chef Stone visited the following countries through food.
1. Kapana from Namibia 🇳🇦
Kapana is basically grilled beef or their own version of what we like to call “suya”. 🥩
2. Togo 🇹🇬
Togolese cuisine includes many chicken and poultry dishes but this grilled Togo chicken is probably the simplest and most straight forward method of preparing chicken. 🍗 Make sure to use palm oil to give that authentic Togolese twist.
3. Lesotho 🇱🇸
Lesotho cuisine is generally less spicy than other African countries. “Makoenva” is also known as Lesotho cinnamon rolls
They are basically fried dough with some raisins and then rolled in some cinnamon sugar.
A very interesting dessert I must say, kinda reminds me of our own “puff puff”
4. Libya 🇱🇾
Libyan cuisine is mostly derived from the Mediterranean, North Africa and Berber cuisines. 🗺
Tahjin Mahshi is a flavorful Libyan dish that consists of a variety of stuffed vegetables. 🌶
It is usually served as a main or a side dish.
5. Malawi 🇲🇼
Malawian Chambo is a type of fish that is particular to Lake Malawi.
Fret not, the fish is in the tilapia family and so a regular tilapia fish fillet will do just great.
6. Mauritius 🇲🇺
Mauritian Bol renverse literally translates to “upside-down bowl”. It’s a simple stir-fry of different assortments of your choice in a thick sauce served over rice.
7. Mozambique 🇲🇿
Peri peri is Swahili for “pepper pepper”.
This meal is a fragment of the Portuguese influence and Mozambicans can never get enough of the spicy, zesty peri peri flavour that dominates their various meals today. 👨🏾🍳 🌶 🇲🇿
8. Seychelles 🇸🇨
The Rougail is a stewed dish that is very tasty and simple to make. It is typically served with white rice or yellow rice 🍛
9. Somalia 🇸🇴
Suugo suqaar is basically pasta sauce with beef in Somalia. Somalia inherited the love of pasta from the Italians who once colonized a part of Somalia.
10. Botswana 🇧🇼
Seswaa is a traditional simple slow-cooked meat dish in Botswana. It is also considered the national meal of Botswana and is often made for weddings and celebrations.
11. Tunisia 🇹🇳
Tunisian fish Chorba is a variant of a very traditional soup consumed in Algeria, Tunisia and Libya. It is well loved any time of the year but especially during the month of Ramadan. 🕌
12. Burundi 🇧🇮
Ibiharage literally means “Fried beans”. However, the type of beans typically used in this recipe is kidney beans. Navy beans are also a good substitute for kidney beans which is what I’ve used in this recipe. 👨🏾🍳
13. São Tomé 🇸🇹
This fish stew is a traditional recipe made in São Tomé and Angola. It is a combination of delicious vegetables cooked in red palm oil with okra. 👨🏾🍳
14. Mauritania 🇲🇷
Thieboudienne literally translated means the rice of fish in the Wolof language in Senegal. Thieboudienne is considered to be the national dish of Senegal and Mauritania 🇲🇷
15. Eswatini 🇸🇿
The cuisine of Eswatini is largely determined by the seasons and the geographical region. This a stewed dish featuring the maasbanker fish and some beef.
