Chef Michael Adé Elégbèdé is a Nigerian, who loves celebrating Nigeria and promoting the unique, coding-rich cuisines and heritage. His cooking journey started at a very young age. Having his mother and grandmother run local restaurants that also served as cooking schools for young women, he naturally found himself responsible for several tasks in the kitchen.
Elẹgbèdé furthered his culinary career and went to Alliance Bakery in Chicago where he learnt the intricacies of baking and pastries. He later moved out of Chicago and attended the Culinary Institute of America Greystone in California, where he attained a degree in Culinary arts. After graduating, he further refined his skills working at restaurants across the country, including the critically acclaimed Eleven Madison Park Restaurant in New York.
In 2017, he toured the South-south and Southeastern part of Nigeria he visited states like: Imo, Onitsha, Akwa Ibom, Enugu, Delta, Cross river where he discover many enticing flavors of the Nigerian cuisine. Michael delights in telling the Nigerian food story with his own personal touch; focusing on the unique flavors, buying local produce and cooking traditions of Nigeria which is being carried out at ÌTÀN test kitchen and the Non-Governmental Organization, ABORI, curated to help local farmers with the aim of facilitating sustainable growth in Nigeria’s food system.
