BEANS AND CORN DISH (EGBO).

Ingredients: – 2 cups of beans, 1 cup of corn, 1 large onion (diced), 6 whole peppers and two medium tomatoes (ground), 1 teaspoon ground dry cayenne, 1 tablespoon ground shrimps (optional), 2 (flaked) smoked fish (optional), 1-2 spoons of oil and salt to taste.
Steps Involved: – Wash corn and beans. Boil the corn and beans separately until soft and pulpy. Add salt to taste.
Prepare the stew sauce: – Heat up the oil in a sauce pan, add the onions, ground pepper and tomatoes. Stir well with a wooden spoon till it’s fully combined. Allow it cook over for about 5minutes on low heat.
Add the shrimps and the washed flaked fish to the sauce, stir well and cook further for about 10minutes.
Serve the boiled corn and beans with the prepared sauce. Enjoy!
NOTE: Adalu’s recipe is alike with that of Egbo but Adalu is prepared in a different way.
